LE PROCOPE RESTAURANT :
Le Procope is the Paris' oldest restaurant and the first ice bar opened in 1689. Since this moment, the french actors established between two theater showtimes, and the coffee became the "café du Théâtre" (theater coffee).
Then Voltaire, Rousseau and Diderot were faithful regulars and the "Encyclopédie" was created under the coffee's crystal Chandeliers. In this place, Benjamin Franklin completed the American Constitution. Nowadays, Procope improves the "bourgeois" dishes, and it doesn't seem like a "grand" restaurant, but a great restaurant, that's finally scarcest !
